"Enzyme Breaks Down Gluten in Food"

An enzyme that breaks down gluten might be the first glimmer of a treatment for people affected by the protein. "It's a wonderful idea," said David Greenwald, MD, director of clinical gastroenterology and endoscopy at The Mount Sinai Hospital. "At the moment, the only remedy for gluten sensitivity is to avoid the protein," he said.
